It's Delish: Cooking With The Glamorous Housewife: BBQ 'Chicken' Sandwiches and Fresh Corn Salad



Today we had one of my favorite salads and one of my husband's favorite sandwiches. The whole thing took about 20 minutes from start to finish:

I start with the Fresh Corn Salad:

1 fresh corn on the cob per person (I used 4 and the following amounts are for 4 cobs)
1/2 a cucumber diced
4-5 radishes diced
2-3 scallions diced
3-4 Tbsp cilantro diced
2-3 Tbsp apple cider vinegar (or red, or rice)
2-3 Tbsp oil (or less if you prefer)
salt/pepper

First I got a pot of water on the stove to boil. As I was waiting for the water to heat up I diced the cucumber, radishes, scallions, and cilantro and shucked the corn. Once the water was boiling I added the corn and let it cook for about 3-5 minutes, took them out and rinsed under cold water and set aside to cool.



BBQ 'Chicken' Sandwiches:
Morning Star fake chicken patties- 1 per person
Hamburger Buns- 1 per person
Bottled BBQ sauce

While the corn was cooling I defrosted the Morning Star fake chicken patties I often use. I also heated up a pan so I could throw the patties on to it to toast them up a bit. I also toasted the buns.

Once the corn had cooled (5 min?) I laid out a clean dishtowel and held the corn in one hand (stem side down) while I cut the corn kernels off with my other hand. The dishtowel contains the kernels and keeps the working area from getting too messy.






Once all the cobs had been shorn I added them to the vegetables, threw on the oil and vinegar, salt and pepper and then tossed.



By this time the 'chicken' patties were done so I added the bottled bbq sauce to the buns and voila! All done!



As a side note, I decided not to have the sandwich and only ate the salad, but I added black beans for protein. My husband doesn't like black beans, but if you don't have this problem, I would add them directly to the salad. Mine were just organic black beans from a can that I rinsed off in the sink.
