Five Vegetarian Dinner Recipes for the Week Ahead



MONDAY - Finbar's Veggie Spaghetti Bolognese

This is an amazing pasta dish that always impresses anyone who eats it! There are a small amount of ingredients required and it's very easy to make. It's great to cook a big batch and freeze the sauce so you have some pre-prepared delicious and healthy meals ready for for those moments when you're pushed for time.

TUESDAY - Southern Indian Vegetable Curry with Curry Leaves
This is from Jamie Oliver's cookbook, 'Jamie's Dinners' and will make a hearty and delicious curry that is lovely served with basmati rice. Again, I would recommend freezing some of the dish so that when you are completely exhausted at the end of a week, you won't rely on a takeaway curry laden with oil and salt, instead you can enjoy a fresh and fragrant curry you made in advance.

WEDNESDAY - Sweet Chili Lime Tofu with Wok Steamed Collards and Quinoa
The dark leafy greens and protein rich quinoa will benefit vegans and non-vegans alike. But if you can't find the cabbage family cousin that is the collard, the recipe does mention substituting it for spinach or kale and the quinoa for rice. Either way the broad range of flavours in this dish and zinginess of lime makes it a superb choice for summer.

THURSDAY - Roast Ratatouille
You can't go wrong with a ratatouille. This is a delightful low fat and flavourful dinner option that could be served with cous cous or a big slice of rustic bread. I haven't tried roasting ratatouille in the oven before but I am keen to give this recipe a try as this method must really enhance the flavours.

FRIDAY - Posh Beans on Toast
Sometimes you just need a light bite to eat at the end of an exhausting week and instead of reaching for a salty can of baked beans, why not try this fresh and healthy version instead. With basil, garlic and chilli flakes to tantalize the taste buds and crunchy ciabatta bread, this easy to make recipe will surely become a family favourite for anyone wanting a quick and fuss free meal.
