It's Delish! Cooking with the Glamorous Housewife- Fish Tacos



Tonight we had fish tacos, coleslaw, refried beans, and watermelon. The kids refuse to eat the fish tacos, so I made them quesadillas instead. It took about 30 minutes to create this meal from start to finish.

Fish Tacos:

Tilapia fillets- as many as you need. I used 5 fillets, three for my husband and two for me. You can also use any mild white fish.
Beer
Lemon
salt
pepper

First I threw together a quick marinade using half a can of my husband's open beer. Then I found a lemon and added the juice. Then I added a pinch of salt and pepper and threw in the tilapia. I let this sit until I was ready to cook it.(By the way, you can throw one of the lemon halves in the garbage disposal after you finish the dishes to clean it and leave a lemony scent!)

Coleslaw:
1 bag of shredded cabbage
1/4-1/2 cup mayo
2-3 Tbsp mustard- Dijon or yellow. I used some Dijon with horseradish and it was excellent.
2-3 Tbsp Apple cider vinegar
2-3 Tbsp fresh cilantro (if you don't like cilantro you can easily omit)
3 chopped scallions
salt/pepper to taste

In a bowl I mixed all the above ingredient and let it set in the fridge. The coleslaw will break down a bit as it sits in the fridge, so if you make this too early, it can get mushy.



Refried Beans:
1 can of refried beans

Basically I empty the can of beans into a plastic dish and then I microwave that bad boy because I find plastic easier to clean then a pot. Plus I can put my container in the dishwasher, and I cant do that with my pot.

Watermelon:

I just cut this into triangles and served.

About 12 minutes from dinner time I get two large pans very hot- one is for the tortillas and one is for the tilapia. Then I sprayed the fish pan with oil and gently placed the fish to cook. I used a grill pan, but any flat surface will do.



I let these cook for about 4 minutes on one side, then I flipped them over and let them cook about 2-3 minutes on the other side. Then I chop the fillets up with the edge of my spatula and turn off the heat.

While the fish is cooking I spray my corn tortillas with oil and cook them on the other hot pan. I let them cook for 1-2 minutes depending on the heat and then flip for about 1 minutes. I then place them on a dishtowel to keep warm.

Once the fish and the tortillas are done I place some of the fish on the corn tortilla, add some coleslaw and then top it with some store bought salsa (I like the fresh salsa from Trader Joe's) and some fresh chopped cilantro.
