It's Delish!: Salmon With Creamy Leeks, Dilled Rice Salad, and Sugar Snap Peas

I love Martha Stewart. I mean I really love her. I have been reading her cookbooks ever since Entertaining came out in 1982. Well, Martha has a new cookbook out called Dinner At Home and I thought it would be fun to review the book by cooking one of the 52 meals.



I decided to go with the Salmon With Creamy Leeks because I have been trying to get my family to eat more fish and I adore leeks.

I started by cooking the rice. I just used basmati rice and followed the directions on the package. Then I moved on to the creamy leeks.

I melted 2 tablespoons of butter in a skillet while I was chopping the leeks. I forgot to take pictures of the leeks just after they were chopped. Then I added the leeks to the pan and let them soften for about 5 minutes. Then I added 1/3 cup white wine and let that cook off. Then it was time to add the cream and fresh chopped chives, and season with salt and pepper. I let it cook for about 1 minute then turned off the skillet and poured the mixture into a bowl to wait for the next step.



The next thing I did was cook the salmon. I sprinkled Old Bay seasoning on both sides of the fish and then put it skin side down into the same hot skillet I cooked the leeks in- I just wiped it with a paper towel first. I find this cuts down on the dishes I have to wash.




While the fish was cooking over a medium heat, I moved on to the rice. By now the rice was cooked, so all I did was add some red onion that I had soaking in red wine vinegar (the vinegar was poured off before I added the onions:



Then I added the zest and juice of one lemon:



And then finished with a chopped clove of garlic and a handful of fresh chopped dill. I added all ingredient directly to the pot of rice because I didn't want to dirty yet another bowl.



Then I just mixed it up and set it to the side.



By this time I had flipped my fish and it was time to saute the snap peas. I just added 1 tablespoon of butter to a different saute pan and let it melt. Then I added the sugar snap peas and the juice of one lemon, salt and pepper. The recipe also called for toasted almonds, but I skipped that.

I cooked the peas quickly for about 1-2 minutes.



By now the fish was done so I served up the whole meal!

I placed the leek mixture down first and then set the fish on top. Then I added the rice and the peas and then sat down and ate it in about 5 minutes! LOL!



I didn't stick exactly to the leek recipe. I was supposed to puree it with some stock in a blender to make it a sauce, but I didnt want to dirty one more thing. I swear it was delish without the sauce.

So there you have it! I would say the meal was fantastic, but a bit time consuming for an everyday meal. Also, it dirtied a ton of dishes. This is a good Sunday night meal when you have more time to cook. Oh, and the husband loved it. Even the 4 year old ate the fish!
