In Season - Vegetarian Aubergine Recipe

Aubergine with Spicy Apricot Tabbouleh

If you want to try a new recipe this long weekend that utilises a seasonal vegetable, why not try this rather special-looking dish? It looks divine with harissa couscous and many fresh herbs. You may also like to try an
Eggplant Caviar. I think I will have to try and make this dip over the weekend. The tablespoon of mayonnaise is optional but vegans may wish to substitute it for Plamil's Egg Free Mayonnaise.
